These preserves are made traditionally by hand without using artificial setting agents or manufactured pectin to ensure a set. They contain just seasonal fresh fruit and sugar.
They cannot be called a "jam" (although they may look and behave as a jam) as their sugar content falls below the statutory definition namely 60g/100g of product. We are not prepared to compromise taste by increasing the sugar content, nor will we use artificial sweetners or setting agents to fall within the statutory definition of reduced sugar jam.
Those of you who have bought from us before can be assured you will be getting the same concentration of fruit and made to the same recipe, although the product tag may now have changed.
